Jigs over ½ oz are best suited for fishing heavy vegetation ;)

Not much different due to weight. In that small of a differance the trailer will effect fall rate more, IMHO. In a football jig 1/8 will make very little differance except in windy conditions, 1/8 may help, again IMHO.

Kinda a weird question but where does a 5/8 ounce jig fall into compared to a 1/2 ounce. Is there anything in between the two?

Its heavier.  9/16 oz. fits between. ;)

Seriously, profile, skirt, and trailer have just as much, if not more to do with the fall rate of a jig.
