Muddpuppy Posted June 3, 2005 Posted June 3, 2005 Avoid keeping the ones from hot mossy water, otherwise they great eating. I like them fried in a spicy batter but a regular corn meal and flour mixture is just as good. I have a recipe for Bass Marsala that I haven't tried yet, but it sure looks good. Quote

razyrsharpe Posted June 3, 2005 Posted June 3, 2005 i marinate mine in sprite or 7-up overnight. it helps to get rid of the mossy/grassy taste. adds a little sweetness as well. i like to prepare a beer batter to fry them in. then, usually, its on the plate w/ eggs and potatoes. the marinade is the key to good tasting bass though. it wouldn't taste nearly as good straight from the water to the frying pan. as my bro-in-law says "i release to the grease!" el_jewapo Posted June 3, 2005 Posted June 3, 2005 the last bass i took home and cooked, i soaked them in salt water over night and rinsed them off and put them in butter milk for about 30 minutes before i cooked them. i used unkle bucks spicy batter and used beer for the liquid. it was really good. BassMaster Posted June 3, 2005 Posted June 3, 2005 BEER BADDER!! take 1/4 cup cornmeal, 1/4 cup flour, and enough beer to make the mixture wet and thick. stir the mixture until it is thick and all the lumps are out. then dip the bass filets in the badder and throw them on the frying pan at a low temp. add a little salt and pepper, some fresh squeezed lemon, and a little malt vinegar. fry up some hush puppies or french fries, add some cole-slaw and an ice cold glass of sweet tea (beer works too). that my friends is a fish fry..... the southern way!
