If you are talking about a Flippin', Pitchin' or Swimmin' jig, I ALWAYS use some kind of trailer on them. For Pitchin' and Flippin' I like to use Fat Baby Craws from Yamamoto and for Swimmin' jigs I use the Yamamoto 5" grub.

If you are talking about the jigs like the Strike King Pro Model jigs and the Bitsy Bugs................then yes, I always use a trailer.  For the Pro Model jigs, I match them with a Zoom Super Salty Chunk, and with the Bitsy Bugs/Flips, I have found the Arkie Craws and they look really good on there.

The trailer also helps slow the fall of the lure which is the time when most fish will hit it.

I try to match the color of the trailer with the jig and for some added color i"ll dip the claws in Spike's Dip-It (chartreuse).

My advice is pick up some Eakins Jig (Peanut Butter and Jelly) and use Chompers Hula Grub matching the jig. I have slayed them with this combo. It is my go to bait.

Always use a trailer either a craw type chunk or a single tail grub for swimming jigs.

I've never fished a jig without a trailer. I have no idea if they'd work without one. I suppose they would, at least in some odd situations.

Does it matter to match color of the skirt and trailer?   Also, how do you chose which type of trailer (frog legs, double tail grubs, grubs, craws, etc.)?

Generally, I like for the trailer color to match up with the jig to some extent.  You want it to look natural.  I use trailers that imitate craws under normal jigging situations.  When swimming a jig, the other trailers mentioned in your post are useful, though some people will use twin tail grubs when jigging on bottom as well.
