Posted May 14, 2010 Super User Posted May 14, 2010 my favorite way to prepare fish is to put the fillet on a piece of aluminum foil and put lots of lemon juice on it, a little bit of butter, some old bay, seasoned salt, black pepper, and a little bit of rosemary. pretty much any seasoning you like. then wrap the whole thing up in the foil and cook it on the grill until the meat is flaky white. this is my favorite way to cook rockfish and bass. Sfritr Posted May 15, 2010 Posted May 15, 2010 Try this 1-2lbs of fillets (bass, crappie, walleye, etc) Fresh ginger (from market) soy sauce Lemon onion medium sliced two to three pats of butter Place fillets in alluminum foil on top of butter pats. Season with Lawrys seasoning salt. Place sliced onions on top along with thin slices of fresh ginger. Squeeze the juice of one lemon on fillets and cover with foil. Place on grill and cook until fillets are flaky and white. Before serving squirt a few dabs of soy sauce on fillets. This is a very nice oriental style of fish. My family loves it. goood luck Quote

However, the best tasting way to eat fish while still being healthy is to blacken the fish imo. Very tasty. You can buy Zatiran's blackening season from most stores. Just be prepared for a smoky kitchen. Quote
Super User Fishing Rhino Posted May 15, 2010 Super User Posted May 15, 2010 Put the fillets on foil covered baking tin. Spritz with lemon juice. Sprinkle on seasoned bread crumbs. Place under broiler until flesh becomes flaky. You can try tomato slices on the fillets before sprinkling the bread crumbs. DO NOT OVERCOOK. Fish becomes cardboard if cooked until it's dried out. As soon as it is heated through, it is cooked. Quote
brushhoggin Posted May 18, 2010 Posted May 18, 2010 i'd season some roughy fillets (any flakey whitefish)with seasoned salt, pepper then spray fillets a bit with pam or whatever oil (except olive) then roll them in flour and throw them in a seasoned skillet with a bit more oil till edges are crispy but middle is flakey. splash with lemon and serve with pbr and tater tots Quote
