Lately I have been on a health kick.. so I have been eating a lot of vegetables using a lot of different sauces. I kicked the veg oil and went to olive oil and have been cooking with wine. I am enjoying these different flavors on a daily basis. Two of my semi home made favorite dishes so far. Mushroom side 1 lb of button mushrooms 1 tbl spoon of olive oil 1 tbl spoon of Italian seasoning 1/4 cup of dry white wine 2 cloves of garlic minced salt and pepper 2 tbl spoon chives First clean the mushrooms and heat the olive oil in a pan on medium. Add the mushrooms and the Italian seasoning. Mix for around 10 minutes until they cook down a little. Then add the garlic and the white wine. Nice side dish with chicken or put over noodles with chicken. Next.. don't really have specific measurements just wing it. Egg Plan Parm 1 Egg plant egg flour Parmesan cheese mozzarella cheese olive oil your favorite tomato based sauce. First peel and slice the eggplant into half inch slices. Dip the eggplant slices into egg mixture then flour. Then put into med-high heated olive oil. Wait until side is golden brown then flip. Prepare a baking sheet and set the oven at 275. Take the golden brown eggplant and place on the baking sheet. Place tomato sauce on the eggplant then cover with mozzarella cheese. Leave in the oven until the cheese is melted and sprinkle Parmesan cheese over top. They are both simple to make, require little ingredients, and are somewhat healthy. I would like to hear some of your recipe's. I am sure not everyone here is making there living off of their secret recipe so please share. Quote
Sfritr Posted March 6, 2010 Posted March 6, 2010 How about some swine: Sweet Chops pork loin cut about 3/4-1in thick (can use bone in chops as well) 1cup Franks Red Hot 1cup light brown sugar (keep ratio 1:1 but make more if using a larger batch) In a saucepan bring Franks/sugar mixture to a simmer until it turns from a bright red to a dark color. Constantly stirring so you don't burn the sugar Remove from heat and cool mixture When cool marinate porkchops in mixture just covering the tops in a glass dish about an hour or two. Save remaining mix for later as dipping mix. Make sure mixture is cool or it will beginto cook the meat. Grill chops until done or reaching and internal temp of 160. This is one of my favorite chop recipes. It is spicy and sweet. The sugar will create a nice char on the grille as well. Spoon extra warm mixture over meat if desired. We used this in one of my restaurants and it was a huge hit. Quote

I should add that I have used this recipe on chicken Pheasant Pork duck all were delicious. It is very simple to do as well Serve with Garlic Mashers or grilled asparagus or both Quote
