I was a Kitchen manager during college for one of the more successful pizza and wing joints out in Amherst NY, NE suburb of Buffalo. First Get some Franks Original Red Hot sauce I buy it in gallon size for about $16 local. It is worth the shipping if you cant get it local anywhere. This stuff is excellent on everything. I put it on my eggs, potatoes, pizza, tacos... EVERYTHING! Buy your wings 6-10 count per lb. Anything smaller is cooks too fast not meaty enough and anything larger just wont have that crunch. Heat your fryer to 375. Cook the wings 14(normal)-22(Super Crunchy) minutes In a good size mixing bowl pour the Hot Sauce:Liquid Butter ratio to taste (about a cup of mixed sauce per dozen). Hot- Straight up Franks with a tiny splash of butter Medium - 3:2 Mild - 1:2 Garlic Parm is equally easy. Just throw a couple handfuls of parm cheese in with a tablespoon or two of minced garlic with ~2 cups of liquified buttter in the bowl and toss em up. Enjoy. Quote
