So, I'm thinking about getting one of these.

Are they rated well or underrated? I might get the 7' MHF, but I want it to be pretty stiff, mostly for soft plastics, spinnerbaits, and lipless cranks. Mostly an all around rod.

I've heard great reviews so far!

The 7'MH is a good all around rod. It's not overly stiff, has a softer tip but good back bone.  I would say go for the 7'H if you plan on mostly fishing plastics, 7'MH if you'll stick more to tge moving baits.  Either would work extremely well.
