I like many veggies but the one I do not like are carrots. Since day one and I ain’t a spring chicken. Do I eat them? Yes. But only because of the benefits. 
 

To me, they have this delayed after taste that is awful to my palette. 
 

I can however somewhat tolerate pickled carrots. The kind you’d find in a can of jalapeños.

Been trying to eat more veggies...even bought the little 'steam-in- bag' deals to make it easier.  I've decided to start blending and drinking them.  They'll go down quick with no butter or salt.  I'll chime back in to report on how it goes.

I like everything except beets and cooked spinach.  I could eat baked acorn squash five days a week. My favorite way to eat carrots is pickled with jalapeño peppers, onions and cilantro.
