also speaking of favorite vegetables, I never had butter beans until I went to Alabama, oh my goodness they will set you free with cornbread. So good, worth singing about !!!!

My wife is focused on me eating veggies with dinner. I grill veggies when grilling fish or any other meat.

You name the veggie we more than likely have eaten it. 
I grill beats directly on the grill about the same time as a potato, peel off the charred skin.

Also love broccoli any way you serve it to me. Cauliflower, cabbage, and most other brassicas I love as well. 
 

Honestly I love most vegetables, cooked most type of ways, fruit included. 

Brussels sprouts cooked in a cast iron with bacon fat, salt and pepper on the grill. Nothing beats that

Brussels were hard for me until I figured out to cut them in half and roast or grill some char into them. Now I love them.

They're probably my least favourite. My dad loved them, so I ate them as a kid. If probably like them grilled like you make them.

Last night's dinner: A piece of baked chicken a long with green beans cooked with some onion and small white potatoes. Really good.

Growing up I couldn't stand vegetables now I love them.  I read somewhere that your taste buds change when you get older.  I'll eat pretty much anything except Brussels sprouts.

Bressel sprouts are good when roasted in olive oil, chopped bacon and garlic. Clean the sprouts, cut half and roast at 400f about 20-30 minutes, stir until bacon is done.

I grill them using a flat iron.

I was similar. I wouldn’t say I love them now, but I definitely eat more of them now than when I was younger because I’ve become more tolerant and realize the benefits they provide. There are definitely still some I don’t care for too though.

I like cooked cabbage for meals like stir frys. I'm also fond of leeks, green onions, and garlic. Broccoli cooked or raw is good. I like mushrooms. Radishes, kale, and turnips are excellent depending on the dish. My favorite vegetable cooked with some flavor is zucchini. 

 

In short, I like vegetables cooked as a part of dishes, but seldom on their own.

Vegetables are good except for squash and brussel sprouts. I despise those.

"Fruit" and "vegetables" are technically two totally different classifications, and food doesn't belong in just one or the other, even though we've become so trained to say something is this or that.

Cake and pie are my favorite ways to eat vegetables and fruits. 😋 Honestly though, I'm not a picky eater, and like a lot of different vegetables. Like most, I don't eat enough of them though.

I love vegetables 

I also love anti-vegetables (pizza/fried chicken)

I got real into sous vide cooking for a while, so much that can be done with that. It shines in some areas and isn't so great in others, like any tool or methodology. For vegetables I like to run it at 185f for 4 hours and do mashed potatoes and corn on the cob in the same run. Always comes out perfect. Especially if you can sear the corn in something when it comes out (I recommend the hot butter left in the pan after searing steaks)

I love most vegetables except eggplant, okra, and rhubarb. Zucchini is a "meh" for me. 

 

As mentioned - don't overcook them!  That's the #1 way to ruin them.

 

Brussel sprouts?  Yes!  Bring it on! I like them split in half and pan fried the best.  However, I remember coming home from school and boiling up some brussel sprouts with melted butter - great snack!

 

Corn on the cob - sure, people put butter on them, but have you tried adding a little salt and pepper on them too?  My wife thought I was nuts until she tried it.  Now that's the only way we have corn on the cob. 

 

I like it raw too. Well...ok...I like most veggies raw in addition to cooked.  I have a fresh salad full of cut veggies just about every day.

 

Street corn, grilled corn, really any kind of corn and I'm game. Corn chowder?  Yes please.

 

Frozen sweet peas and snap peas during the summer is a treat!

 

I used to love asparagus, but I guess my tastes are changing because I don't like them much anymore.

 

Green onion sandwich?  Yep.  Just mayonnaise, cut green onions, and salt.  Sounds nasty, but it's not bad.

 

Grilled Walla Walla sweet onions on a burger is the bomb!  

 

Ever tried chili potatoes?  It's a baked potato, split open and filled with chili.  Dang hearty!  And completely vegetarian unless you add meat.

 

Stir-fried veggies with garlic and ginger can be awesome if you do it right.  It's easy to over-cook them.  Leeks and bok choy are great in stir fry.

 

I can keep going, but I'll stop there.

We eat artichokes my wife boils them after trimming off the leaf points drains and then cuts the in half. Seasons with garlic and butter then I grill them.

I am not a fan of egg plant texture, but cut about 1/4” thick and seasoned with  creole powder and grilled it’s ok.

I love vegetables and they are a staple of my diet. Most of my meals are a variety of vegetables stir fried in a little olive oil with either diced pork, chicken, or beef.  i keep it fresh by rotating different seasonings at each meal.

Try kohlrabi 

peel it, then cut it into 1/4" slices, steam it until it’s fork tender (15-20 min)

After it’s steamed top it with some butter and a little salt and pepper! 😋
