According to my doctor, I can eat as many steamed or boiled vegetables as I want.        I grew up having vegetables as a kid, so I learned to like them. I always have veggies steamed or boiled, because my doctor recommended this way of cooking them. They're a regular part of my weight loss plan.                                       Around my area, some restaurants serve broccoli, smothered in cheese sauce. I won't have this, and always order plain steamed broccoli, with no cheese sauce. Fried veggies are not great either. I've always liked corn on the cob, with plenty of butter, but rarely have it anymore, because the butter adds fat.          My favourites are carrots, green beans, broccoli, and peas. A little salt and pepper are my only seasoning. Fresh asparagus cooked on a grill is really good also. I'm a big believer in having vegetables each day, and, I'm sure that eating plenty of veggies has helped me lose weight. My doctor told me that the average person doesn't eat enough vegetables, and should eat more.                        What are your favourite vegetables, and how do you like to cook them?

i hate veggies, alas.  i have to eat the highest quality veggies, organic, farmer's markets....  there's a type of carrots i like - nantes. much sweeter than the typical cardboard tasting ones.  tomatoes?  they gotta be heirloom or early girls, etc.  not the........no cardboard ones, such as you'd get in the typical grocer. 

you're lucky you like veggies - although steaming them is like........... wow.  although i do eat steamed brocoli, but often with salt.  i prefer fried in olive oil, tho.

why not a good quality olive oil drizzled over the top of the broccoli? olive oil is one of the mainstays of the mediteranean diet, and good quality oil has a wonderful flavor.  i keep my olive oil in the fridge...  otherwise, it quickly goes bad.

I'm probably one of those people.  The average daily serving of vegetables recommended is like 3-4 servings.  I'm lucky if I get to half that.  And there's certain veggies I just don't care for.

 

I prefer mine raw.  I always wash them.  Steaming or cooking them turns them soft and mushy and that's kind of what turns me off.  I feel like I'm eating gerber baby food.

 

Vegetable juice like V8 or something similar can help, as can taking a daily multi-vitamin.  I have a small garden every summer and eat a lot of cucumbers and cherry tomatoes but a guy can only eat so many of them.  Also, a lot of people don't realize that a potato is a vegetable.  Obviously consuming french fries is an unhealthy form of potato though.

What's a vegetable?

 

I'll occasionally have some broccoli, potatoes or peas with dinner...maybe 2-3 times a week...rare occasions I'll cook up some asparagus....otherwise I'm veggie-free.

 

Fruit on the other hand...I always have cut-up honeydew in the fridge, oranges, bananas and sometimes some plums or kiwi. I probably go through 4-5 servings of fruit a day as that's what I 'snack' on.

Brussels sprouts are probably my favorite. I cook them in a fry pan with some bacon grease. Not the healthiest but delicious. 
 

Also love broccoli any way you serve it to me. Cauliflower, cabbage, and most other brassicas I love as well. 
 

Honestly I love most vegetables, cooked most type of ways, fruit included.

My eat most of them but my favorite is asparagus.  I grow my own and for several months a year I eat them twice a day.  I eat them raw, steamed, baked and grilled.  I store some chunked and frozen for winter frittatas.

As a kid, my mom had to stretch her food budget to feed my dad and 5 kids so she always bought canned veggies. Canned vs fresh or frozen vegetables are the absolute worst. I attribute those canned veggies as to why I won’t eat many of them to this day.

 Being a city boy I too grew up on canned, my wife grew up in PA farm country and grew up with fresh, so of course we get fresh all the time, which to me are just okay, I prefer canned.

 

We do grow and freeze most of our own veggies, much more so now in retirement.

 

I do manage to stop out and get a steak after fishing, occasionally. She’s not a red meat eater either.

 

I agree, Brussel sprouts are down right terrible, in smell as well as in taste.

  I like and eat all vegetables as often as possible. Grilled Egg plant is one of my favorites. Boiled Okra is bottom tier.

Try blanching stuff like broccoli, cauliflower, carrots etc. v. boiling or steaming. Personally think preserves more of the flavor and nutrients.

 

Also there's nothing wrong with fat. We need fat. Just try to moderate your animal fats. Brussels cooked with a good olive oil... yum!!! Cheese sauce... blah. Real cheese in moderation👍

 

I think if you can eat mostly whole foods v. processed stuff/fast food you're doing good.

Okra has always been my favorite but it’s easy to live on vegetables in my area. Large scale farms are virtually not existent due to the terrain so everyone just grows small gardens and feeds themselves instead of selling anything. We were raised on a variety of veggies, mainly corn beans okra tomatoes and squash.. Also lots of greens in the fall and onions in the spring.

Brussel sprouts?!?!, just nasty, can’t do it! @Mobasser, artichokes, asparagus, broccoli, broccolini, zucchini, cauliflower, green beans, spinach, carrots and Swiss chard all are steamed and pretty much on the vegetable side of dinner menu at our house. Avocados with a little salt and pepper are a nice snack as are celery, radishes and cherry tomatoes. Just good stuff…

Wish I could send you cherry tomatoes @J._Bricker, got a couple hundred on the vine. I eat like 15 a day but it’s not making a dent

Thanks, much appreciated! Last time I grew tomatoes I had 6 foot tomato trees, probably due to all the salmon heads and trimmings I was burying in the garden. Now I gotta ask, are they cherry tomatoes or those grape cherry tomatoes? Either way they’re good as a snack or in a salad. The Mrs and my kids like Caprese salad with big beefsteak tomatoes with mozzarella cheese.

I’m not sure what kind they are , my wife planted them even tho she doesn’t eat tomatoes. They are about the size of a grape

I was eating about 2 cucumbers a day since mid July and wasn't making any headway either.  Plus I was donating to co-workers, neighbors, and family.  They just kept coming!

 

I am pretty sure it was because of all the rain we've had this spring/summer.  I only had to water my garden twice all season.

I have a great recipe for cauliflower steaks. Drizzle some EVOO and salt and pepper them. A little chipotle seasoning and throw them in a hot grill. Brown on both sides about 6 mins each. The bring them inside to rest under a foil tent for ten minutes while the broiler preheats. Sprinkle them generously with a mixture of Asiago, basil, oregano, then season with salt and pepper again. Put them on a sheet tray sprayed with Pam. Broil for about 90 seconds. Pull them out, take a good whiff, then dump them in the trash because no one wants that crap.

Our small garden beds are mainly for tomatoes, with a one pepper and one jalapeno. I absolutely LOVE tomatoes!

 

We have so many, the wife started making her own tomato / spaghetti sauce. And since we removed processed vegetable oils and high-fructose corn syrup from our diet, she makes all dressings, etc., from scratch.

 

I will eat pretty much anything, with two exceptions -- I will not eat liver, and I will absolutely not eat watermelon!  ICK!

 

Wife has a connection who raises beef...we've been doing this for 10+ years now. He says "they aren't 100% organic...I need to give them some antibiotics and keep them healthy...but I do sing to your steer!"

 

Wife meal preps with her son every Sunday -- it's usually some sort of meat, paired with vegetables and/or brown rice, and her homemade sauces. This week was Korean beef with coleslaw, edamame and mixed veggies. Last week it was a Greek bowl. Good stuff!

I also have a great recipe for watermelon. 
 

@TnRiver46 those are cherry tomatoes. I have grape tomatoes in my garden. They're more oblong, shaped like a grape. It's fairly self explanatory.

All Cajun recipes start with vegetables!

 

Onions, bell pepper, celery, green onions, carrots, tomatoes, & potatoes.

 

We cook with pinto beans, blackeyes peas, Lima beans, red beans, Navy beans, kidney beans.

 

Then there's collard greens, zucchini, yellow squash, & pattypan squash. 

 

@Mobasser cure for the corn!

All recipes should start with onions, celery, and corn.
