throttleplate Posted June 16, 2024 Posted June 16, 2024 Wife constructed a cage to put her fish in to dry in the sun, she marinates it in vinager, put lots of spices like garlic, ginger, chili powder and onion salt on the fish and leaves it out in direct sun for 2 days, then fries it in oil and eats it with a bowl of rice. 3 Quote

I am not a squid guy, when i lived in san francisco i was introduced to squid at a top end restaurant and i was dipping it into a red sauce and it was good untill later in the year i tried it again at a few different eateries and it was like chewing rubber bands. I then got grossed out on it and stopped eating it and started eating escargo aka snails which i loved, NOT, just joking about the snails. 1 Quote

fishhugger Posted June 17, 2024 Posted June 17, 2024 drying the fish, with those seasonings.............then frying it, which imparts oil and kind of re-softens it, i'd guess......... that's concentrated flavor, imho........... do you enjoy it also? Quote

No i dont eat it, i am sure it is very good as she has been drying blue gil and crappie filets every day since last week, except today, no sun as its raining. This is how philipinos preserve their fish and enjoy cooking and eating it this way with a bowl of rice, soy sauce and some vinager to dip in. When i was living in the philippines i would see fisherman at their homes displaying hundreds of fish filets spread out on sheets of plywood drying in the sun for minimum 2 days then taking them to the market to sell or sell on the street. To get the salt to prepare the fish, the fishermans familly fill up large plastic jerry can containers with sea water then bring the containers back and empty out the water in a contained pool of sorts and as the water evaporates the salt is left behind and collected. 1 Quote
