Sbarro's is originally from New York. Lou's is originally from a near suburb of Chicago. The oldest deep dish pizza that I know of is Uno's and if I'm not mistaken, Lou Malnati worked at Uno's before going out on his own.

 

Personally, I'd rather have a Chicago style thin crust or a stuffed pizza than deep dish. 

 

Going to Gibson's tonight, also mentioned in the video, for a company function.

If I have it right, Lou’s Dad Rudy worked for UNO’s and was the one who created the signature deep dish in the 40’s. 
 

In the 70’s Lou opened his first in a northern suburb somewhere. 

And I agree, much rather have the thin crust cut Chicago style than any other.

I thought Chicago style was deep dish. Is Chicago style just the sauce on top? You’re losing me with thin crust!

Thin crust pizza cooked well done and cut into squares rather than triangles. The crust is done differently than NY style. I would say it's more of a stiffer crust. NY style crust is soft and floppy. You can fold a slice of NY style in half. If you tried that with Chicago style the crust would break.

The real difference between a Chicago style deep dish and Sicilian is that the crust is bare on a deep dish whereas a Sicilian has the toppings and sauce all the way to the edge. 
 

The old timers say that a true Sicilian Pizza almost always has anchovies or at least the oil with different herbs and the dough is lighter and fluffier. 
 

There are subtle different variations of the Sicilian depending on the area of the island you’re in. 
But what I explained can be called the “Americanization” of it.

My brother lives in Lincoln Park and he has been to just about every steakhouse in the city with his clients. He says Gibsons is the best of them.

 

Don’t personally care for Chicago-style pizza myself. Just personal taste I’m sure.

 

Its unfortunate that Chicago essentially controls that entire state, because some parts of Illinois are pretty nice. Western Illinois has some of the best deer hunting in the country.

I think part of Gibson's attraction is where it's located. It's in the Gold Coast in an area known as the * Triangle. All sorts of happening restaurant's and clubs within walking distance off Rush Street.

I keep telling my wife we need to take a 2-3 week road trip, just travel around to all the places shown on Food Network, Man vs Food etc...

Maybe we can add a clause to subdivide states in the National Divorce bill...
