Tenderloin from Elk, Moose and Wild  Boar are as good as it gets from game.

All the other cuts you need to know how to handle and cook it.

Not a fan of deer because we have mule deer and it all depends on their diet and how it’s handled and butchered.

Game birds puddle ducks are ok again based on their diet. Geese Canadians and Specks brined* and cooked properly are OK .

Chucker and Quail you can’t go wrong, they are both good. Pheasant again depends on their diet, like ducks I brine them over night.
* soak over night in 1 part white vinegar or salt to water in the frig over night. Stuff with chunked apples and oranges.

Came here to say just this. Unexpectedly delicious for something that roosts in alkali ponds. 

 

Kudu is a very close second for me.

In no particular order.  Sandhill is yummy but it’s so beef-like. It’s easy to love. (Fun to shoot!)

 

Of the hooven beast.  Axis deer is tough to beat. 
 

rounding out my list.  Wild hog.   But making it delicious is low hanging fruit.   Sweet and sour pork tastes store bought.

You are correct, I have eaten many wild pigs and they do taste like…… pork 😂

The closest I’ve gotten to game since I was a teenager is attending a few game suppers put on by volunteer firefighters in NY state, and those were all casserole type dishes, stews, chili’s, etc. Not much you can tell about the meat in that form. Grew up a city boy, you wouldn’t care to eat the available game.

 

I just mentioned the Black Bird Jambalaya to my wife, she thought I was kidding. Spent this afternoon making the base for Paul Prudhomme’s recipe.

There’s a fair number of big game cuts, game birds, waterfowl, and fish that are just not very good as a stand-alone meal. You have to mix it in with other ingredients to make it palatable. Or deep fry the crap out of it.

 

Believe me, I’ve had some terrible game before. Literally, like chewing on shoe leather. And it wasn’t because it was over cooked either.

How the game animal is taken care of after killing it makes a big difference of the condition of the meat quality.

My brother in law took his dad to a muskrat meal at a restaurant in Ohio, he said it was some of the best game he has eaten! Haha. I’ve seen something similar on TV before, apparently it’s pretty good
