Of all the things that have gone up lately, this might be the worst one yet. We would buy a 1lb jar for $24.99 about 2 years ago. Then it went to $29, then $35, then $40 so we just stopped buying it. I have really been craving some so I just looked online. Now it is $59.99. Wow!!!! I know beef has gone up, but man that's a lot.

Labor costs too. I stopped buying pork ribs at $5/lb. I'll buy them when they go on sale for $3/lb or less. At the end of the day, supply and demand will hopefully fix it.

I hear ya! We usually pick up a bag of Old Trapper at the gas station whenever I fill up the boat, and I had to do a double take at the price last time out (technically I've been taking a double take at the gas price every time too).

Make your own. I'll wait until top round roast is on sale for 3.99 a pound and then make a bunch and store it in the freezer

Anyone have a favorite recipe? I looked online and there are only about 2 million different ones. LOL

I just gave away 4 quarts of frozen processed Hatch green chillies to some friends of my wife for jerky making.   This is their first try and I am hoping they get it right as I am looking forward to our cut.

I’ve made my own from recipes online and my favorite is sweet with a little heat just enough to make your nose sweat. I don’t have a particular recipe because it’s been a couple years since I’ve made any. I will say this, from my experience I’ve found the online recipes tend to be a little lite on flavor so I’d add more to the ingredients. 
 

The best I’ve had so far is a combo pack with several different flavors from Cabelas.

A good base is 50/50 soy sauce and worstischishire sauce. Add whatever spices you want.

I'm back to eating Spam and liverwurst.

But if I crave beef jerky, I run to Costco, best I've had.

Move to the philippines, stray dogs get made into jerky. I refused to try it.

I get my dehydrator out look at it for a bit, put it up, then drive to Publix and get some Ol Trapper Peppered.

Marinate the cut of meat (I usually use London Broil)  in Texas Pete's Sriracha Sauce. I wouldn't use any other sriracha, just Texas Pete's. It has a nice sweet heat to it.

 

For a dry rub, try Tony Chachere's Creole Seasoning.

 

Aw, man. Now you guys have me going - I just told Alexa to add London Broil to mu shopping list.

I get small bags from Aldi's for about $4 a bag, I think they're 3.75oz bags. Pretty decent jerky and good snack sized bags to pack for a day of fishing.

Are you going to make it from ground or some cut you're going to slice?

I will have it sliced. Either out of sirloin or a roast.

1 t liquid smoke

3/4 C soy sauce

1/2 C worchestshire 

1 t garlic powder

1 t salt

1 t accent

1 t allspice

1 t pepper

1/2 C water

2 t onion flakes

 

marinate for 3 days then dry and dehydrate/smoke

And we're off. I did a simple recipe this time. I had 2lbs of roast sliced. I told them pretty thin asthat is the type I prefer, well they got it thin lol. Hopefully not too thin.

 

I did equal parts soy and worcestershire (10 oz)

Tsp garlic powder

Tsp onion powder

Tsp salt

Tsp pepper 

Dash of cayenne pepper 

 

I put the meat in the marinade about 4 yesterday and got them out about an hour ago. I did cracked black pepper on them and set the Traeger at 180 degrees. 

 

Hoping for the best.
