Yeah, their fins are formidable., but it’s worth it. I have a dedicated filet knife  just for them.  I have a different way of filetng them too.

As for Bluefish.  I grew up eating them and love them still today. I suggest smoking them , it's  delicious.

There just isnt as many spots here as NC. I dont get many here like I used to…

I dont think Ive had smoked bluefish but I have had smoked mullet, which is good. 
My son caught a big bonnet head shark once, and soaked the filets in milk for 3 days , then smoked them. It was OUTSTANDING. By far the best shark I’ve had.

Wife is also a fish lover, to the point it has become annoying simply because she wants me to keep every fish caught, salt or fresh. 

 

This past spring while fishing in the wind I let a nice 3lb LM swallow the hook, to the demise of fish. 

Took it back to camp and wife seasoned and cooked on open fire and it was outstanding. 

 

That tasty bass triggered a boat purchase. 

Sold my single man fishing kayak and bought a 2-man boat so the wife could fish now when we camp on the lakes. 

And guess what ?

She keeps every single fish she catches that's legal.

That was my dad. His idea of catch and release was catching fish and releasing them into the ice box, lol. That’s why it took me years before I ever threw anything back. But I put them all to good use…

My mom refuses to eat fish. She was raised dirt poor. Her Dad fed her and her 3 brothers and sister anything he caught or anything he killed or whatever they grew in the garden. They ate bass, crappie, perch, deer, squirrels, quail, etc. and she refuses to eat it now. I'm honestly not sure if she just got tired of it, or it brings back memories of being so poor. BTW, this was in the 70's when most people weren't still living off the land. I started eating bass when I was in college and it was a 3 or 4 night a week meal and I loved it. Then when I was about 24 I started Crappie fishing and started eating it and I was blown away at how good it was. The local lake was on fire for Crappie for about 3 years and I loved it. Then the state came in and implemented new limits and the lake went to crap. I haven't had fish in a long time but this thread makes me want to go out and catch some dinner.

I just finished up the last of the walleye from my Memorial Day trip to Erie. All that's left in the freezer is bluegills myself and my grandson caught.

my fish / game freezer is down to about 1/4 full. Trying to eat it all up because it’s getting old. The older stuff gets under the newer , even though I try to flip it once a year. 

I have never had a problem with catching fish to eat around here. If that wasn’t enough, a customer gave me a big bag of rainbow trout he had caught somewhere in the mountains. He said they caught so many it was coming out his ears and he was sick of eating it. 

Im sure that wont ever be a problem for me !

I've never had walleye or bluegill but heard that they both taste really good. 

I haven't caught any walleye where I live, I've only caught them in NH many years ago. 

Send over some walleye fillets in exchange for, say haddock? ?

My mom was like that to some degree, growing up in Rural NC. She knew how to do most anything food - wise the old way. After her and dad moved here and he had a good job with the railroad, she quit a lot of the old ways and would just go buy it at the store.

Except fish. That stayed the same .

It never ceases to amaze me when people say they love to eat fish and then they post photos of it completely smothered in batter. That’s the batter you’re tasting…not the fish. You might as well make hot dogs in batter if that’s the case.

A little butter, a little salt, a little pepper, and broil it.

Hey man, sorry I didn’t meet your expectations. I know that you’re culinary skills are way more advanced as well as your level of sophistication than I’ll ever achieve.

I shake mine in dry cornmeal. Is that breaded as opposed to battered? 
 

also if you’ve got a lot of white bass, the meat smoker can be a great place to cook them and they keep in the fridge for the next weeks snacks

Batter deep frying is good, baking is good, smoking is good, cedar plank on the grill is good...

@gimruis Stop being closed minded. Nothing wrong with batter frying.
