I also add sugar to my chili ... it's supposed to cut down the acidity?? Chili and smoked meats are the only dishes I make that don't have microwave directions.

Yes it does, and I’m starting to do it myself. I actually like it. We do it with goulash as well, but I use brown sugar instead of white.

   When I was little, Mom would always put molasses in ham-n-bean soup. A lot of the old folks used molasses for a lot of things. But then again, many of the Old Way raised cane and made their own molasses, so that was probably why.

   I left that world in 1967. I've not seen anyone make their own molasses since. Who knows ......... maybe I should return one of these days and see how things have (not) changed.              jj

i'll occasionally add a little less than a teaspoon to a pot of spaghetti sauce to cut the acid

Oh dear lord. My grandpa ate dessert after breakfast everyday. This dessert was: half a stick of butter covered in molasses. He liked the stuff so much, he always dragged us to the local Mennonite community called “muddy pond” to watch them make their own molasses. For anyone who has not seen this process, lemme tell ya it’s a real thriller when you are 8-10 years old. You get to watch mules walk in a wide circle! If I never have to see molasses being made again, it’s a small victory.

   Yeah, I know what you mean. There's a difference between being forced to participate when you're a kid and looking on as a (moderately) interested adult.         jj

I made a PB&J today for lunch. Make thick and sloppy, and eat over a bed of potato chips. The drippings of strawberry jelly pair nicely with salty chips. Washed it all down with a bottle of Cheerwine.

Gots to be strawberry preserves. Jelly is for...amateur's.

As a kid, a young man, an adult, I say screw you. I ate PB&J with strawberry preserves for lunch everyday from kindergarten thru 12th grade.  I may have graduated high school in the 20th century but I still partake in the occasional PB&J today and it's always strawberry preserves...black raspberries can go to hell.
