When people ask me to cook I ask two questions.

 

Do you want your peanut butter sandwich made with creamy or crunchy?

 

Do want jelly on it?

I do all the cooking in our house. I enjoy cooking and making food for other people. I don't do anything fancy, but I'm pretty good at it. One of my favorite things to make is BBQ nachos. Pulled pork, baked beans, cheese, BBQ sauce, spread over chips, into the oven for 5 minutes to melt the cheese ?

i love to cook, but i hate doing dishes.  i have a notebook for recipes that i've collected or created over the years. i can bake, too.  i want to learn to grill & smoke.

My wife received a big air fryer from one of her customers as a Christmas gift so Sunday I think I’m going to do toasted subs for the “big game”. I’m not sure what I’m doing for the meat though. I’m thinking grilled chicken with grilled onions, green peppers, cheddar cheese, and bbq sauce. We shall see, but I’m looking forward to it. I’m starting to get the air fryer dialed in though. 
 

I’m trying to do a Firehouse Subs type of deal.

I enjoy cooking, but I don't feel my skills are up to par, so I don't do it much. Usually, it's just breakfast stuff or salmon.

+1 on the smoker! It's the only thing I can cook with. Beef tenderloin and a small Boston butt.

I’m no chef that’s for sure. Cooking really isn’t difficult. All I do is take things that catch my eye on TV or in my travels, look them up online and make them according to the recipe.

I’m like you, no pro by any means but I enjoy it, providing I have all the ingredients needed for the recipe. I find the hardest part about cooking, especially if it’s an entire meal, can be time management. You don’t want to have your veggies all cooked up too early, and then get all soft and crappy while your waiting another 1/2 hour for your meat to be done etc. If you can figure out how long it takes to get everything done all at the same time, then your on the right track to a decent meal.

Timing is definitely the biggest trick of all.  Any one thing can be easy...but a bunch tough.  Made some Maultaschen last night.

Any Chili cookers here?

I was making Chicago Deep Dish for the game but I switched gears and will be doing a chicken chili. 

I'll post a recipe if there's any interest, but seriously, there's gotta be some good chili cooks here!?

I wish I had my chili recipe written down but I don’t. All I know is I brought 5 gallons of venison chili to work one day years ago for a holiday meal and everyone loved it. I will say that yes, my chili has beans. Red and dark red kidney beans and black beans. And I use a little cinnamon. As well as cayenne and dried chili peppers. It is good!

I wash the dishes every night after she cooks haha. I can wash two sinks full of dishes before I could find the thyme in the spice cabinet (granted I would be looking directly at it yet still not finding it)

I have at least 25 types of dried chiles here....which of course is the basis of chili.  Can't say if you are looking for a defacto ground beef version that it is my jam though.

boy, we could get into a regional brawl over chili.  

Cubed venison (nothing less than Cubed round) and throw in some bacon for fat.

   Yeah, that's why I deleted the recipe I posted. It wasn't really chili at all, but bean soup with chili seasonings. I lived in Texas for a year or 15 months, and I learned REAL quick what chili was ....... and wasn't.                jj

If we want beans, in the serving bowl, we layer black beans, tortilla chips, chili, and cheese - frito pie.  

 

Another reason not to add beans to the chili pot - here, the last of the chili usually gets spread over eggs for breakfast.

an old girlfriend showed me how to make my chilli  way better, and it was already pretty good. my recipe fills a big ol stock pot, i dunno...it's maybe 2 gallons? but anyhow, i was making it one day, and she...persuaded  ? me into adding something i NEVER would have thought of. 

3-4 squares of baker's chocolate.  the ones that are about ¾" 

what it does is subtle but it makes the sauce sooo good. 

i'm no chef, so maybe some of you guys already know about that.

but i do make certain things well. nobody leaves my table hungry ?

Wow Cheezy, never heard of such a thing.  But I'm open to anything.

 

I get to start cooking everyday pretty soon.  The wife and I are retiring in different states. She is a rapid production type cook, can put a meal out in 30 minutes. 

 

As far as dishes,  I actually like to cook things slower so I have plenty of time to clean up as I go.  Thanks to the person that reminded me of jambalaya,  I have a killer crock pot version if I can find the recipe.

Just did chili a couple weeks ago. Ingredients are 6 kinds of peppers, beer, wine, and a whole lot of love. (Can't tell you the rest because it's a secret)

 

Super Spreader Sunday is 2/2/1 ribs in the oven, too cold to grill or smoke, temps hovering around zero. Garlic hot wings, stuffed jalapeno's wrapped in bacon, worcestershire shrimp, chips and dip.

Chili has been simmering for a few hours...course I had to taste those 16 ingredients.

Twice fried loaded skins were delicious!

Mine is an 8 to 10 hour simmer
