I've got Motorguide so I can't help you with Minn Kota other than two blades are better than three.

 

And I love my Grass Ninja, will go on all future Motors regardless of brand. Five out of five shurikens.

Grass Ninja worked great on my old Motorguide, reduced fouling by vegetation to an amazing extent here in the Atchafalaya salad factory. Just switched to an Ultrex and after it's maiden voyage, imagine I'll be ordering a Grass Ninja for it as well.

My 2014 Maxxum 70 came with a Weedless Wedge 2 and I highly recommend it. When my antique Minn Kota 12v on the transom broke I bought an Endura Max 55. As luck would have it my brand new never used spare prop for the Maxxum 70 is the recommended replacement for MKP-37 Power Prop that came on the 55.  :)

The vibration is from the prop cutting the grass, the thicker the grass the more vibration.

 

In thick enough vegetation like really thick Lilies it will bog down. I either reverse it or pull up & spin the prop.

You'll lose a bit of open water power, it's the tradeoff. Since I spend most of my time in or near the slop, I want the 4WD capability. If it gets too windy, just lower your motor more, helps a wee bit. I have a 21' Triton and I can still stay on spot in the super wind. Just not as snappy as the three blade version.

I upgraded my TM two years ago to a 12V, digital, variable speed 55lb Motor Guide(not wireless) and it came with a 3-blade Motor Guide describes as a "Machete"blade.  The blade housing fits inside the motor housing, so it does a great job of cutting its way through the salad, even at just 55lbs.  Very nice design.  The higher I have the speed set, the more efficient it is at eating its way through.
