Personally, I have financed my boats but I prefer one a little older with average hours and all the bugs already worked out.

This is true.  But in general the older something is the more likely it will fail.  Plus you could always just pay for it in one lump sum and avoid financing.  Straight cash homey?

I have been in the  “I’m going to buy a boat next year” market for about 3 years now, so you caught my attention with the lower unit comment. So I must ask— does insurance cover that?

In my case it did not.  If I had hit something it would have but I know I didn’t and there was absolutely no damage to the case.  When the shop pulled the lower unit off they said there was zero oil in it and also zero water in it.  Water would have indicated a blown seal.  They suggested someone tampered with it.  When I called my insurance guy he told me to make a claim and see what happens.  I chose not to.

20% down or you won't get a good interest rate and/or term no matter how good your credit is.

FYI ordered a new boat last summer(picked up 15 weeks later) so this is a little dated but through my dealer the going rate at that time was 5.5% with good credit for 15 years. Don't remember or have a record of the amount of down payment mentioned. Found a few places with lower rates but decided to pay cash instead. Not an option for most and wasn't for me earlier in life with 4 great kids at home but now retired and everything paid for but the truck and when the wife said "we can't take it with us" our saving account got a little smaller.
