Nice. Never tried that. I use the showtime “set it and forget it” rotisserie. I plug it in outside when I run it in the summer.

In honor of the fact that I have to go back to work in person on Monday, I decided to whip up the BBQ Pit Boys Pineapple Whiskey Baby Back Ribs. But I am using Vodka and Maraschino Cherries. We”ll just call this “Northern Strain” Pineapple Baby Back Ribs. I like vodka and maraschino cherries (instead of whiskey and pitted cherries) because, IMO, they bring out the natural sweetness and gameyness of the pork. But sometimes, I’ll make similar recipes using Southern Comfort and Maraschinos. Believe it or not, this is the first time in my life adding garlic to my ribs! 
 

After adding my 10 spice rub (with ground ancho & New Mexico dry Chile’s) and a little salt.

After getting the sauce. I threw in a Jalapeño for heat. But there’s yucateco habanero sauce in there, too.

I did a little extra saucing and smoking in Apple, cherry and a little pecan, since I had some that I must’ve ordered late last season.

Tonight I grilled a 20oz ribeye medrare and also cut a Vidalia onion in half brushed it with olive oil and charred it up as well. My lady made us some baked taters in the air fryer. A little butter, Greek yogurt and cheddar on the spuds. Went slice of steak with a slice of onion. Washed it down with several I've cold Buds. Pretty solid summer meal.

Bacon wrapped largemouth, veggies, and fruit for desert. Made a bourbon caramel glaze for the fruit.

Smoked 4 racks of spare ribs today, gave away a couple of racks to neighbors.  Almost forgot to take a picture.  This one was one of the longer ones I kept for us because the rib ends hang over the indirect piece and end up burned, so it isn't the prettiest rack I did.  Sure was a good July 4th supper, though.

I did three racks yesterday and forgot to take the picture- I cut them into two-bone sections before glazing them up on the grill with the reduced drippings and a little homemade sauce. Its not my traditional Memphis dry-rub purist model but it is a crowd pleaser!

The wife came home Thursday and threw 11 pounds of spare ribs on the counter and asked me to cook them Sunday. Who am I to argue with that?

So I cooked them up. Filled the Pit Boss right up! I forgot to take a picture of them done. Oh well. My dad finally got to try my ribs.

All I have to say is diet ball pineapple saw that on YouTube and had to try it  I was not disappointed nor were everyone place on the 4th of July cookout

Lol take 2 pineapples Remove the skin and all the eyes cut the ends flat so they all stand up take two Ziploc bags put them in them and add fireball whiskey soak them for a couple hours make sure you cut some lines across the pineapple so the wiskey  gets in there then you need brown sugar raw sugar and cinnamon when you’re ready to cook it you can cooking on a gas grill I put it on a rotisserie and it runs for 45 minutes halfway through you want to cover it again with the brown sugar cinnamon mix you can you tube it  Malcolm read how to barbecue right fireball pineapple I get a lot of good stuff from that guy

Since the tides seem to be turning back to....

How about some baby octopus? Dad had surgery and I've been cooking for him. Last week he said he had a taste for some grilled octopus. The deli's didn't have any so I figured I'd give it a go.

It turned out pretty good for my first go at it. I made it greek style

Over cooked. Calamari only needs to cook for a minute or two.

Yeah, I know...

There are some things I really like, but can't quite imagine what the first guy

was thinking. Oysters would be at the top of the list, jalapeno peppers right

up there and then maybe crawdads.  I have actually eaten octopus on a sushi

plate. It was just okay, chewy as I recall.  I hope your dad liked yours.

I only tasted it. I dropped it off by dad and we sat and watched the Indiana/Michigan State game and I left. Dad just called and said it was fantastic. I said you don't need to blow smoke up I disagree. He said he really loved the flavor the wood gave to it.
