I have a good friend ...who by the way took me fishing a couple days ago and dropped off some North Carolina "Liver Mush".  Being from Oregon I had never heard of this but I love food so I tried it.  OMG......fried and then add a couple eggs on the side....not bad...not bad at all.  Actually he had brought some last fall and so this is the second time....when he told me was bring some it put a smile on the ol face....and oh....last night had some pickled venison heart....neighbor had given me a heart so made this up too......ahhhhhhh December.....fishing .... food....friends....Bass Resource....life may be short but it can be good.

Until this thread I have never heard of liver mush. It did not sound too appealing.

Out of curiosity I had to do a google search. it still doesn't sound very appealing. 

Growing up in Iowa I have eaten a lot of pork, but there are certain parts of a pig that I prefer not to eat.

If it appeals to you ,go for it. I will stick to the Iowa chops, pork butt, and bacon.

Its just like scrapple - if you've never tried it, you're missing out on a Southern delicacy. Crisped up on a griddle served with some fried eggs over easy...whooooeee!! That'll make your tongue flap so hard it'll beat your brains out!!!

Hunters or Jenkins Livermush is great eating! I usually fry it crispy, set it on some grits and put three over easy eggs on top. It's the breakfast of champions! :)
