There's an early season in TN from Sept 1- Sept 22. My buddies got two while we were fishing, destined for smoked goose pastrami per "meat eater" recipe . We had some that he made earlier in the week while out on the water, quite delicious

The smell that comes off those geese when you clean them is intolerable. I shot so many geese over the years and I could never find even a decent way to prepare/cook one.

Pork doesn’t smell good when you clean it either hahaha. You should try the pastrami! Then again I am a fan of “gamey “ flavor but my buddies aren’t so much, and that’s why there prepared it differently this time. I usually just grill it very rare, although I had a buddy slice it really thin and cook it in a skillet on the boat once. Then he put it on a sandwich with greens and eggs, that was also very good. The key seems to be don’t ever cook it long no matter what you do
