By yellow catfish do you mean yellow bullheads? Some people call them buttercats as well. The Everglades is loaded with yellow bullheads. Best time to catch them is at night.

Have not tried blackened catfish but have eaten blackened dolphin which is extremely delicious. Might try some blackened catfish fillets from one of the next channel catfish I catch.

A yellow catfish is another name for a flathead. I hear bullheads are tasty too but I've never really targeted them, but that's something I might try this year.

 

Blackened catfish is incredibly delicious and easy. Coat it in cajun seasoning and blacken! The trick is to find some cajun seasoning that is not all salt -- I used to make my own but I found some from a hot sauce company called Heartbreaking Dawns that is perfect!

Crappie & walleyes out of clear clean cold water eaten shortly after being caught is second to none IMHO
