Here in Mo. you get after them young greys and red squirrels, or yearlings as some call them when they get to cutting acorns and hickory nuts in early and mid fall, skin them out , quarter them up, little salt, little pepper and a little oil, a bit of flour and fry them not slow but somewhat moderate. absolutely delicious and tender along with some gravy. Some people hunt them in the early season after memorial day as they get onto the mulberries but beware of ticks galore

My Grandmother made squirrel for my father almost every time we came to the farm to visit. Cooked right, a squirrel is a real treat!

I think the dish was Squirrel & Gravy. 

One thing to note: Older squirrels can be tough. Boil them in salt water for a 15 minutes before frying. After they are cool, dry them off, dip in buttermilk, dredge in flour and fry until brown on both sides.

I prefer quartering and throwing in a croc pot with everything I would usually use for a regular pot roast.  I also bake them and eat like chicken wings. Incredible cookbook that is an absolute steal for its price point.

Re reading this thread makes my mouth water . Didnt hunt at all this year .  Health problems in my family required a lot of attention .
