I did a pork tenderloin in enchilada sauces with onions, garlic and chachi's in a crockpot.  When done added a pack of mexican cheese to thicken.  Wife loves it.

Looks good ...BUT... bake bone  side down next time...better presentation

God lord my colon would kill me if I even tried to eat that. Enjoy it for those of us who can not.

Eating healthy again tonight. Ahi tuna steaks, done extra rare on a smoking hot grill, asparagus done the same way, and a side plate of raspberries, blackberries and mango. Yum!

We had St Louis style ribs. Tried a new method. Smoked at 225 for 2 hours, oven at 225 for 2 hours, let rest for 30 min, then Broiled in the oven on high for 30 min, sliced the ribs, turned oven on hold and made the mashed potatoes and mac and cheese. Actually pretty good. Bark was great. May try it for 1 hour next time, got up to 165, a lil too done for my ribs,

That looks great Glenn.  There's a very good French dip place close to the office.  Then of course there's Philipe's in Los Angeles when we're in town.  Home of the original French dip.

French dip sounds great.....I'll be right over lol.

 

tonight it's lamb chops, salad, plenty of salad. I'm under 300lbs now and falling. The goal is 250lbs.

Everyone in my house is sick, grilled cheese and soup for dinner. No sense in making a nice dinner when nobody can taste it or even has much of an appetite to begin with.

I like grilled cheese.  There's actually a restaurant near me called "The Melt" that I've been wanting to visit.  They have some unusual grilled cheese sandwiches (but I'd probably order the Classic).  I was going to say this only happens in California, but I just looked at their website and they're also in Colorado and Texas.

Been wanting to eat some Loinfish Ceviche for the past couple days.Might go diving soon and get me a couple of them.

We have a few.One is called Roxys.They make a braised beef grilled cheese.Its amazing.

They used to be very expensive in the aquarium hobby years ago but then became a pest in FL. Glad they are good to eat! Any good baked or fried?

 

Found a good Chinese place last night near the house. Good Chinese is hard to find in my area. Had the Manchurian Beef (mushrooms, onions, brown sauce).

Looks like it is bone side down to me.  My one suggestion would be to fold the thin tail end of the filet under a bit, two to three inches.  Will prevent the thinner tail flesh from drying out/overcooking.

 

Actually, you can fold it under far enough so that the cooking thickness is fairly uniform from one end to the other, and the filet will be uniformly cooked.
