Smoked at 225 for 2 hours, oven at 225 for 2 hours, let rest for 30 min, then Broiled in the oven on high for 30 min, sliced the ribs, turned oven on hold and made the mashed potatoes and mac and cheese. Actually pretty good. Bark was great. May try it for 1 hour next time, got up to 165, a lil too done for my ribs, 1 Quote

There's actually a restaurant near me called "The Melt" that I've been wanting to visit. They have some unusual grilled cheese sandwiches (but I'd probably order the Classic). I was going to say this only happens in California, but I just looked at their website and they're also in Colorado and Texas. 1 Quote

My one suggestion would be to fold the thin tail end of the filet under a bit, two to three inches. Will prevent the thinner tail flesh from drying out/overcooking. Actually, you can fold it under far enough so that the cooking thickness is fairly uniform from one end to the other, and the filet will be uniformly cooked. Quote
