What category do they fall under for record purposes?  The state records I checked do not have a category for coppernose- so what are they considered? 

" The coppernose bluegill is a subspecies of the common bluegill. It is not a hybrid. Native to Florida and southeast Georgia, it has a range similar to that of the Florida largemouth bass. "

IGFA puts them in the bluegill category.

Not trying to be a know it all, but I've never heard them called coppernose .I've only known them as copperheads my whole life in Florida.I always have thought they were just mature male bluegills.

Might be a slang, but the subspecies name is coppernose.
