For fishing in creeks what weight of a jig head should I use for tube baits?

depends on current speed, wind, depth, bait, and such. There is no one magical weight.

1/8 and 1/4 is a good place to start.

It also depends on what size tube.  Although creeks tend to be shallow, they can also have a lot of current.  You want a weight heavy enough to get the tube down and keep it from tumbling down current.
