While high voltage concertina wire and claymore mines carry a certain appeal, I think the next best approach to protecting my boat and gear while I'm camping or at a rest area might be a portable "high illumination" light with a motion sensor (which I could sit in my boat).  Ideally, it would also have an app for contacting me via my phone when the sensor is "tripped."  Does anyone know of or recommend a particular product?

They make boat alarms that will go off with any vibration or if someone tries to remove electronics, and they can link to your smart phone . But there's inexpensive ways too...
