Has anyone tried this? With the level of detail in a lot of plastics today I was wondering if the bait would hold up. By hold up I mean in terms of form and action after you melt the affected portion of the plastic.

You could, but it would probably be a lot more effort with worse results than if you just used some Mend-It.

If you are referring to fusing ripped plastic worms, or putting on claws back on baits, well I used to use a battery operated soldering iron. First of all you go through a lot of batteries, Secondly it smells. However, it does do the job fairly well. With the advent of Mend-It, I would never go back to the soldering iron. Mend-It fuses it solid with no rework.
