Could someone please tell me what would be the downside of using 50/200 Hz and 455/800 Hz transducer instead of the 83/200 Hz and 455/800 Hz for fishing on a reservoir with depths to 150 feet?

Using the 50 kHz frequency will show you more bottom on your screen, however, your target separation deteriorates. Remember the lower the freq the deeper it will work, and the higher the freq the better target separation.

So, if I'm more interested in structure than fish location, it won't make much difference?

If you only use 200 kHz, it makes no difference which transducer you use.
