The only way I ever enjoyed it was to cut in chunks, put in the crock pot with about 1 1/2 cups of BBQ sauce, 1/4 cup honey, and a few tablespoons of sweet chili sauce. Let it cook until it is as tender as you like. Quote
preach4bass Posted November 26, 2014 Posted November 26, 2014 Butterfly the breasts, stuff them with cream cheese and jalapenos, close the breasts, wrap in bacon, then grill until bacon is crisp. That's our favorite way to cook them. We eat a lot of duck, cooked several different ways, but everyone seems to like it this way. 1 Quote

What about throwing them on the smoker? Is that a good option? Quote

Is that a good option? Bacon doesn't count. Automatically turns anything unappealing into "edible" at minimum. Can't help you on the recipe but Happy Turkey Day fellow FIB. A friend smokes them in a pan and uses ginger ale in the bottom of the pan to keep some moisture in the smoker. Another friend of mine swears that if you soak them in buttermilk it will remove a lot of the gamey flavor they have. You will have to let us know how you like it. Quote

I can't tell if the bacon makes the walleye taste better or vice versa. All I know is it's deeeelishus. Wish you a happy thanksgiving also and I hope momma and kids are doing well. 1 Quote

VolFan Posted November 29, 2014 Posted November 29, 2014 Either cook it slowly in something sweet (dr pepper, ginger ale, job and soy sauce) or grill it rare. You could also put them snugly in a pot, add enough duck fat/butter/lard/etc to cover, and cook at around 200 degrees for a few hours. Shred that, quick hit on a griddle or hot pan just to crisp it up and off you go for tacos, omelets, etc. it's confit, and it works really really well for stuff like that and keeps for a few weeks if you leave it in the cooking fat in the fridge. A simple way to do it is cook it like country fried steak, but my favorite way is wrapped in bacon, stuffed with bell peppers, onions, and sausage, grilled. If your buddy gave you diver ducks.......uhhhhhhhh.....good luck! Quote
