Pull a bass out of a big hydrilla patch in 80deg water temp, put salt and pepper on it and pan fry it in a little olive oil or toss on the grill. Let me know how it tastes. Most of the bass I'm catching now are coming out of hydrilla and solid grass, all I do is salt and pepper it and fry em. They don't taste like weeds? Idk where y'all get that from. Kevin22 Posted July 4, 2014 Posted July 4, 2014 Any of you guys ever tried "ceviche" ? .  Grind the fish fillets in a blender, then add a lot of lemon juice ( enough to cover the meat ) and a little bit of white vinegar ( do not add any other kind of vinegar or the meat will taste like the vinegar you used ) and leave it "cooking" for a couple of hours, remove the excess juice and vinegar combination you used to cook the meat, add chopped onions, chopped tomato, chopper serrano peppers ( be careful with how many, it depends on how "hot" you like ), a little finely chopped cilantro and salt.  Yummi ! of course you gotta have a few beers to make the dish some company.   You need to freeze those fish first!!! Acid will not kill some of the harmful parasites and bacteria that is in freshwater fish. You need to freeze them solid for at least 48 hours then thaw and do as you please. Pickling is the same way and you NEVER want to pickle a fresh fish. Acid + freeze will kill enough to be safe. Quote
Super User geo g Posted July 4, 2014 Super User Posted July 4, 2014 I don't know anyone that eats bass anymore, although I see people using live bait keeping everything they catch. I don't have a problem with people eating bass, but its not for me. For twenty years, we have had warning signs all over the place from Okeechobee south, warning about eating fish from these waters. Mercury levels are way too high to be safe. A product of all the fertilizers used in the sugarcane industry. This has certainly helped the catch and release efforts. Every fish released is there to get bigger and be caught again. A win win!!!!!   1 Quote
tatertester Posted July 4, 2014 Posted July 4, 2014 I recall some years ago catching a nice limit of bluegills right off my brother-in-laws dock.....My kids had a great time catching them as many were caught beneath the dock where they could see the action in the clear water.....I took the fish home and filleted them immediately......Battered the fillets and into the frying pan.......These sunfish tasted just like eating decaying lake weeds...They were absolutely awful!!!!.....YUK, I can still remember that taste in my mouth. I fish a lake on a military base that has signs up everywhere saying don't eat more than one bass per meal due to zinc.... No thanks I'll just have chicken Quote

I have eaten largemouth probably four times, four different ways and every single time it tasted like skunky seaweed. You could smell them as it cooked. Y'all to funny  You have never cleaned one have you?  Do you think that when a bass grabs a bluegill, a craw, a hellgrammite, a frog, or anything else in a patch of weeds that he reaches in with his fin and pulls the moss out of his mouth before he swallows?  That seriously might be one of the dumbest things I've read on this forum.  I eat at least 3 pounds of fish a month. Super User Lund Explorer Posted July 6, 2014 Super User Posted July 6, 2014 I have to admit, I had a couple of bass filets the other night and they tasted just like weeds!  They are what they eat.  Fortunately, I had a steak in the fridge so I threw it on the grill. Dang thing tasted just like a bale of hay!  They are what they eat.  Still hungry, I drove to the meat market. Asked the butcher what the pigs ate where he got his pork chops from. Gave up on that idea!  They are what they eat.  Still not giving up, I drove to the seafood store. I was halfway to the door when I realized that anything that swam in salt water would be like biting off a chunk from a salt block!  They are what they eat.  Since then I've been on a strict diet of Mac & Cheese, but I leave out the cheese part. I don't need any of the dairy products that those darn grass eating give up. It's Udderly Disgusting! 5 Quote

HeavyFisher Posted July 6, 2014 Posted July 6, 2014 The two times I had bass, I cooked it with a little lemon and butter. Both times the meat tasted like dirty lake water, kind of a weedy taste. I'm sure if I covered it in egg and batter it would have tasted so much better, but I'm not really one to try and hide the taste of nasty just so I can eat something. Hell what do I know, it's not like taste is subjective right guys? Quote

When he would eat the feeder fish off the bottom, he would suck in several of the small rocks layering the bottom of my tank. Immediately after sucking in the prey, the bass would expel all of the rocks from his mouth. I can only assume it does the same thing with a big ball of weeds. Quote

I have cleaned many, many bass and I can assure you 9 times out of 10 the summer bass I clean have a stomach full of decaying weeds. Usually at the same time there is a couple hellgrammites in there or a crawfish or two.  If you guys are cleaning bass out of weed patches and not seeing a stomach full of weeds then I guess you are lucky. My guess is that you are catching them out of open water which would make sense that you have never seen or tasted a bass full of weeds. Quote

If you know what you are doing you can absolutely taste the difference between a cow that has been grass fed vs one that has been grain fed. There is an Iowa farmer that feeds his pigs acorns and other nuts. The meat is extremely high priced and highly sought after because of the unique nutty flavor in the meat. But I guess if you have only eaten cheap fed beef, trough fed pigs, and boxed mac & cheese then you won't understand the differences in taste. Similarly I can taste the difference between a spring, summer, and fall bass. Spring they taste great, very mild and just fantastic. Summer they get the weedy taste at times, but out of open water they are still good, the texture can be a little soft if you don't bleed them and get them on ice immediately. Fall bass taste like shad (if you have ever eaten a sammich after taking a shad off your hook you know the taste!).  I guess that's why people say there's no taste difference between a porterhouse and a sirloin and that they all taste like "steak". You have to be born with the ability to disearn different tastes in what you are eating or you will never understand and will never pick up on the "you are what you eat" saying. 3 Quote

I enjoy them, and find their taste comparable to most freshwater fish. While it is true that there can be some variance in the taste of just about any species, I have never had bass that didn't taste good that was handled and prepared properly. By prepared properly I am not just talking about deep frying. Sauteed with a little olive oil or butter, and some onion is one of my favorite ways of eating them.  Kevin22 I agree with you that there are many who can't taste the difference between Miracle Whip and Mayonnaise. I am not one of them. Taste is a very subjective thing though, and the mind is interesting. If am convinced the bass I catch out of heavy grass are going to taste bad, they probably will-to me. Quote
