Lostinthewoods Posted January 27, 2014 Posted January 27, 2014 I tried LMB for the first time this past year. I enjoyed it. I'm not certain I can't enjoy anything pan fried though! It definitely doesn't come close to as delicious as some of my favorite saltwater species. Namely Striped Bass! Quote

basscatcher8 Posted January 28, 2014 Posted January 28, 2014 If I'm on vacation i keep part of the catch. Mostly bluegills and walleyes though. Spotted bass are pretty good. Wont keep to many largemouths. Smallmouth is good as well. Best thing ive heard for fish and this came from the walleye crowd was to snip an artery in their gills and throw them on ice immediatly which allows them to bleed out and im told keeps the fish from tasting gamey when you cook it. I've not done it as a parent because my wife & daughter raise a big fuss because they think it's cruel. Quote
Jason Penn Posted January 28, 2014 Posted January 28, 2014 I grew up very poor and we ate anything we caught, bass including and bigger ones just meant we had more to eat. That said, they always tasted terrible to me, very much like I imagine dirty algae would taste. I probably haven't ate a bass in almost 20 years now. Honestly I wish I liked the taste though. We have a lake with a 13-15 inch slot limit right by our house that has very clean water and is loaded with 12 inch bass. If I liked to eat them at all I'd have no problem getting a fresh fish dinner once in awhile. if it's clean water, try them again. i've eaten plenty of dinks that came out of a clear water lake, and they are indeed good. even out of this lake, i always released anything probably 14" up and only kept the small fish. it would probably help the size of the other fish in that lake if there was a harvest. coots Posted January 29, 2014 Posted January 29, 2014 The bass club I am in, it's a small but tight group of guys (16 of us) is C&R as well, but once a year we have a fish fry. So we keep what we would consider the best eaters during the tournaments (never overkill) and we all get together during the summer and have a fish fry & swim party at one of our members house. It's always a good time to spend with the guys and have some fish. We always batter and deep fry it in a big fryer... it's fantastic. Leave it up to the Alabama boys to batter and fry it! Quote

I don't like freshwater fish in general anymore, I ate too much fish growing up and just lost the taste for it. It isn't an issue of not having them prepared properly, being from the wrong body of water, nothing like that. Every fish I catch gets released unless someone else wants to eat them. It's funny how upset some people will get when they see me release a keeper walleye, crappie, trout, or catfish. Every year I'll try some fish (usually a walleye caught early in the year fishing jerkbaits for bass) hoping that I'll have regained my taste for fish but it just hasn't happened. Quote

silvercliff_46 Posted January 30, 2014 Posted January 30, 2014 ENJOY * Exported from MasterCook * PESCADO de Dennis Recipe By :Serving Size : 2 Preparation Time :0:00Categories : Fish & Seafood Amount Measure Ingredient -- Preparation Method-------- ------------ -------------------------------- 4 whole fillets -- white fleshed fish 2 tablespoons taco seasoning mix -- can use up 4 or more 2 tablespoons southern rub -- can use up to 4 1 cup masa harina -- to dredge 1 cup all-purpose flour -- to dredge 1 1/2 cups masa harina -- for breading 1 1/2 cups fine corn meal -- for breading 1 pint picante sauce -- Fresh not bottled ***** 1 tablespoon sugar -- to taste it's what you like not me 1 whole lime -- fresh 1/2 cup sour cream -- or more (up to you) 2 whole egg -- mix with a bit of milk or water for egg wash Taco Seasoning Mix Southern Barbecue Rub ( Joy Of Cooking ) Drain the picante sauce, add zest of the lime, and sugar. Do this a 1/2-1hour before to meld flavors. Here is how I do this: I keep the longthin curly strips of zest for presentation, I then grate the remain zestwith a grater, This is added to the salsa. Juice 1/2 of the zested lime, reserve the other half for presentation.Qtr, thin slice whatever your creativity tells you for presentation. Make sure your fillets are boneless, I usually use bass, but the choiceis yours. Mix the masa harina & A.P. flour, with a bit of taco seasoning Mix fine corn meal with masa harina add the taco seasoning and southernrub, mix well. This is your breading. Make the egg wash with milk and eggs lay out your breading station, egg wash, flour, breading. get your sautepan heating but not too hot. I like a mix of butter and oil as it raisesthe smoke point of the butter Egg wash, flour..., egg wash..., breading..., then into the pan. Sautefish until JUST done and GOLDEN (not a nasty brown) Plate then add salsa on top of the fish and a wide strip of sour cream ontop of that. a bit of parsley and a sprinkle of paprika finish's the dish (don't forgetthe lime you reserved for presentation. I ocassionally keep fish for the table, don´t ask me when was the last time I did so because I swear I can´t remember, ( yeah, it´s been THAT long ago ). Quote
