Y'all Yankees got it all wrong. Scrapple is disgusting. It ranks right up their with stewed opossum. Now souse meat and head cheese thats another story. Both of those beat scrapple out of the park.

I ain't no dang yankee first of all , all these recipes came from my great grandparents , the biggest secret is in the amount of cornmeal and wheat flour you use to blend the taste in the scrapple , and we SOUTHERNERS ain't got it wrong   LOL !!

Ain't never had Southern scrapple before. If its anything like Yankee scrapple you can keep it. I just know when I had it in Michigan, it tasted horrible. Like I said it ranked up there with stewed possum. Now fried possum and baked possom ain't bad.

Now if you would like to make me some scrapple I might give it a second chance. Until then. Yuckkkk!

let me see if i can clarify.....nope lol 

 

The only 'possum or however it is spelled i have seen close up ( i don't count the ones i would try and hit  while driving to the river) was as a kid.  I was probably abut 8 and about 2am my dad comes in to my room and wakes me up.  Says put on your shoes and come with me.  Of course i am like what the crap is going on.  We go out side and in a trap he set up there was a "possum.  that thing was nasty.  All hissing and biting at the cage.  The last thing i thought of was eating that little wretched.....

My phone has decided its spelled possom. Which is odd. Cause it was spelling it opossum a little while ago. I'm too lazy to correct the stupid thing right now. Apparently the new android update added auto correct and auto substitution. Its quite the pain in the arse.

I was being serious....i have no idea how it is spelled but my macbook apparently thought 'possum is a perfectly acceptable spelling lol

I believe it is spelled "possum" being the abbreviated version of "opossum".

What do you wish to talk about then ? Cow stomach ? it's a food , Monkey brains ?  Snake meat ?  there are a lot of delicacies that people won't consider "food" yet if we ever were to have a cooking forum should those not be included either ?

A note about grinding your own...you can add frozen, sweetened butter, cubed, to your meat to increase the fat content.  Flat steak is fairly lean. 

 

 

For you guys that want to try it, but don't have a grinder, you can use that food processor that's still in the box from your wedding, lol.  Just cut the meat into 1" cubes, and freeze on a cookie tray fro about 20-30 minutes.  You'll have to do small batches, about two burgers at a time, but it works great.

 

We have a meat grinder , just had to try this with some deer meat , what a cool way of doing things , I did it like this and used it to put in my deer jerky dispenser , smooth even strips , Thanx for the tip !!!

Simple Sausage Gravy

 

2lbs of your favorite sausage

 

1/2 to 3/4 cup of flour ( will depend on how thick you like your gravy ) 

 

Milk about 1/2 to 3/4 of a gallon

 

I use this recipe for camping but you can adjust for smaller portioning , this feeds 6 people or more depending on their appetite's

 

Brown sausage in a large skillet or deep skillet , just as sausage gets done add the flour while the sausage is still on the heat and mix thoroughly until the flour is completely incorporated with the sausage , add the milk and bring mixture to a slow boil while stirring consistently until it becomes gravy , add salt and pepper to taste while it is thickening and remove from heat and serve with your favorite biscuits .

 

I use a medium low heat and cook mine a little on the slow side , if you use a higher heat remove the sausage while you are incorporating the flour , otherwise it will burn or brown too fast on you .
