CountBassula Posted June 4, 2013 Posted June 4, 2013 Not sure where to post this, but long story short: my mother is coming to visit us in S.FL. in 2 weeks, she lives in Poland (where I was born) and she visits me, my wife, and our 2 kids, on fairly regular basis. Now, I always wanted to take her shooting guns, but she wasn't thrilled with the idea, so I didn't push it. Recently she confessed that she feels bad about not going shooting with me because it is something I love and she should participate in it. I said no worries mom, and then she said she will certainly go fishing with me!!! I'm like great! So I have this idea: I want to catch a bass or two, as well as a snakehead or two, and cook them for her/us! I'm thinking deep friend fillets breaded with seasoning, but wanted to ask you guys for any other recipes. Both bass and snakeheads are boneless, so that's good, and the only way I ever cooked them was by deep frying. now I'm thinking about maybe broiling or grilling with some mustard/oil spicing on one side, or... Give me your favorite recipe for fresh water fish!!! Quote

CPBassFishing Posted June 4, 2013 Posted June 4, 2013 Just get some fish fry breading, mix in a little salt and pepper and flour, dip the fish in egg then roll it in the breading and fry it in oil at 400 degrees. Take it out when it's golden brown. Oh yeah, and cut the fillets into 3" squares before all of this. Please don't keep bass over 17", if they get that big they can live to be giants. Pan fried with a cornmeal and seasoning mixture dipped dry wet dry in some buttermilk or egg. Option two, over an open flame wrapped in aluminum foil with fresh lemon juice and pepper. 1 Quote
Super User slonezp Posted June 4, 2013 Super User Posted June 4, 2013 Try this, it's real easy, delicious, and lighter than deep fried Melt some butter and put a couple cloves of crushed garlic in it and cook on low for maybe 5 minutes. Marinate the filets in the garlic butter for 15 minutes. Put it on a baking sheet and drizzle the melted garlic butter on top. Sprinkle some fresh ground black pepper. cover it with the "Italian 4 cheese blend" shredded package cheese you get at the grocery store. Top it off with crushed potato chips. Bake on 400 for 15-20 minutes depending on the thickness of the filets. Quote

Seriously tho, I always like my fish blackened. If you check out a local fish market they usually have some spices, rubs and frying batter that are good. Quote

I'll only eat smaller ones, hear they taste their best at around 14", plus heavy metal content is lower. My best friend used to say that "the only thing you shouldn't eat with garlic is vanilla ice-cream, and even that is up for debate!" She brought me some Zubrowka and Sliwowica (disgusting plum vodka!!!!) last time. Zubrowka is good, especially when on ice and with a splash of apple cider!!! For a special treat I highly recommend grilling the snakehead jaw much like you would a salmon jaw (for a long time over low heat, like 18" above the coals.) Quote
anonbassman Posted June 4, 2013 Posted June 4, 2013 I like to make deep fried fish tacos. Take your filets and coat them in a mixture of flour and taco seasoning. Dip them in an eggwash and them coat them with a Panko bread crumb and Taco seasoning mixture. Serve on torillas with cheese and either salsa or jalapeno cream sauce. Salsa 2 large tomatoes 1 onion 1 jalapeno 1 juice of a lime 2-3 cloves garlic cilantro - to taste (some people don't like it) salt to taste Chop or blend all ingredients in the food processor. Salt to taste. Also add however much jalapeno you like for spicyness. Jalapeno Cream 1 Cup Sour Cream 1 jalapeno - charred over flame 2 cloves garlic salt and pepper to taste 1 tsp chili powder 1 tsp cumin remove blackened skin from jalapeno, and finely dice. Mince garlic. mix all ingredients together. 2 Quote
200racing Posted June 5, 2013 Posted June 5, 2013 i like blackened bass. mix equal parts garlic and onion powder,lemon pepper, half amount of black pepper and 1/3 amount of red pepper. dry the fillet with a paper towel then rub olive oil on the fillet. spread your seasoning on the fillet and put in hot cast iron skillet. cook till you have a good crust on each side and its falling apart. 1 Quote
