Just bought a 1995 Procraft 210 dual pro and the console has a lowrance x70a. Will the current cables work for a lowrance elite 7? Kind of a noobish question and I couldn't answer it myself researching it online.

No, they won't. The transducer itself is tuned to 192 kHz and doesn't have a built in temp sensor.

 

I used to have that unit.

How easy would it be to remove the old one and install the new one?

The most difficult part of it is routing the transducer cable.

 

The best way to handle that is tie and tape a string to the current transducer cable at the plug--make that connection as straight as you can so it doesn't get hung up in the cable and wires in the hull, pull out the transducer cable, then tie and tape the new transducer cable plug to the string and pull it in.

Tie another string to it before you pull in the new cable so you will have a pull string for any future installations.

Is the X70 builf into the console? If so fitting the widescreen Elite 7 will be difficult. Might be better off leaving the X70 where it is and use a Ram mount tfor he Elite7

No it is on the side with a mount
