Checkout Santuit in Mashpee .... The pond is not to big, very few pleasure craft if any and offers pretty good protection from the wind. Plenty of good size fish and is perfect for your Kayak.

How's Santuit for launching a v-hull boat?

Not sure .... I have a mod-vee and it is plenty deep without backing into the water. The pitch of the ramp is not steep but it isn't flat either, also it is not a paved ramp. I think you would be fine ....if not there are plenty of good lakes nearby ..... Masphee-Wakeby, John's Pond, Ashumet and Peters Pond. There is parking at the ramp for 5 or 6 rigs but parking is allowed up on the road.

Borderland in Easton has some nice Large Mouth and Small. If you go on a weekend I would stay away from the "main" fishing area at Leech Pond and walk along one of the adjacent pathways. You'll find some kind holes in the forrest that look over the pond that you can pop out of. There's another off of mountain road, Puds Pond, that was killer and great for your kayak.

Yes, but there is the Merrimack with three different sections to fish, and closer to town there is always the Mystic and it's ponds.
