My Grandmother made squirrel for my father almost every time we came to the farm to visit. Cooked right, a squirrel is a real treat!
I think the dish was Squirrel & Gravy.
One thing to note: Older squirrels can be tough. Boil them in salt water for a 15 minutes before frying. After they are cool, dry them off, dip in buttermilk, dredge in flour and fry until brown on both sides.
