I spent a good amount of winter researching this and finally committed to the new Ride 115x. Just the right size and it provides me plenty of options down the road.
I just sold my canoe because I found it difficult and uncomfortable for a full day of fishing. I am replacing it with a SOT Yak as well. I have been checking them all out and settled on the Ride 115x. I am placing my order closer to spring so that when it comes in I can quickly go out and test it on the waters.
As it pertains to spooking fish I don't think I had a problem there. It was more of a boat control thing with me. Moving to quickly when trying to finesse stuff.

In New York for example there is the NY Bass Federation tournaments.
You can also venture into the ABA ( or BFL (http://www.flwoutdoors.com/bassfishing/bfl/).
It boils down to money and time. The opportunities are out there.

I made the mistake of being taken by the Scatter Rap thing too. I can't stand them. I agree with you completely that it will catch fish but I doubt it will catch more than any other lure on the market.
It does look cool though.
You mentioned professional overruns happen to you more often. When I first made the switch to FC I learned how bad a professional overrun is to FC the hard way. Losing a good fish.
When you get FC tangled it puts significant weak spots in your line. That will cause it to break when tugging on it or playing fish it that part of the line is exposed.
I found the better I got at avoiding backlashes the less issues I had with like breakage.
I personally use Seaguar InvizX and AbrazX and love them both.

You will learn a ton from your boater if you pay attention but remember this is not a chartered trip so their focus won't be on teaching you per-se. If your budget can afford it and their schedules don't conflict you can do both. If you can only choose one then I would suggest going with the one which affords you the most time on the water. Do your homework and fish hard!

There are a few people on this site who might be able to help. Start with Siebert Outdoors who has sold me jigs in the past. They can sell them painted without the skirt if you want. Cadman I know also sells jigs and can probably help you out.
As for colors you cannot go wrong with these 3.
Green Pumpkin (maybe a hint of orange skirt)
Black/Blue
Peanut Butter and Jelly
