I've gone up to 75ish% for a ciabatta, never ventured into the 80% range. Can't imagine working with something that wet. Might be something to try though. You have my respect for the boules your making.

Love making pizza. The dough, the sauce and have made mozzarella cheese as well. The cheese process is a bit messy and somewhat time consuming, but you can't beat fresh moz.

I purchased my boat just after Labor Day last year and so far they haven't gone up in price bases on "build your boat" option from the website.

A pain? I don't think so, not as much as a car or house or any other big dollar item. Like most have said, you have yearly maintenance on a boat. What's that old saying: "treat it right and it will treat you right" or something like that.
You also have maintenance on your car, house/property. But you knew that when you bought into it.
2 stroke vs 4 stroke? I've had both and have no preference other than the fact that 4 stroke is way more enjoyable to have a conversation in when operating.

Honestly, IMHO, any repair will always look like a repair no mater how well you try and match it.
As far as adding fleck in the mix? Like anything, look up to see what the manufacturer recommends, if recommended, then try it on an inconspicuous spot to see how well it blends.
