Dont know about spring fed creeks, but find the deeper dropoffs in the creeks that form in the bends of the creek is a good bet, shrimp, jigs, jerkbait for the trout, just depends on what they want that day. In the real cold water those shallow flats when the sun is high is a redfish heaven.

Well the carrot stix are an extremely light (as in weight). but they are tuff. I think that is a good set up. I personally don't use a 7'6", just my choice. I don't think you are outgunned at all.
