Almost 35 years of fishing. I had an 8 pounder that was the biggest for several decades. That was before I found this site. Now 6 to 8's are fairly common.
Taylor and I went to our local mud puddle/county park/old phosphate pit to test out the new humminbird this afternoon. Caught several 2 pounders and then this girl inhaled a blue berry vibe.
She only weighed 6.1 pounds which would score a 35.32.

Yep - "Deep" water for us is 8 feet. But that may be 100 yards or more offshore. Now that I have the electronics to easily find the offshore grass in Toho and Kissimmee, I am spending more and more time "out there", by myself, with a fluke.
To answer the original question. There are "probably" more and bigger fish offshore. They are ABSOLUTELY less pressured.
I've heard of them up to 20 lbs in some of the deeper lakes in Winter Haven. The FWC regularly stocks them in Medard Reservior and I have caught a few small ones on beetle spins while fishing for specs.

Today's society has lost the importance of precision and accuracy. "Close Enough" drives me nuts. I take a lot of pride in being precise and accurate in everything I do. Apparently you value that as well. Sadly, we are in the vast minority. I understood your frustration and sarcasm, and agree.
They are very good to eat. They are stocked by the FWC as a harvest crop because they will not reproduce. They are normally caught on catfish baits like chicken livers.
The FWC stocked over 600,000 fingerlings last year.

I have broken more than ten. Rod locker, big foot, hook set, truck door, garage door, swinging big fish, kids using them, ect. I have also broken 2 reel seats and what seems like hundreds of guides.

The weather was crappy yesterday so Nicole and I decided to make the trek to BPS in Orlando. Never to be done again, mostly because of the traffic on I drive and we have one being built in Brandon that should be open soon.
I picked up a few things in the sale baskets and Nicole got some shoes. But I had spent probably an hour in the rod section and had picked out a new 7'-9" Veracity for flipping, then I put it down and decided to email Ron at Valley Sports.
I received his price this morning and boy was I glad I waited.

I grew up on Norman on Skippers Cove. I live in Florida now and have since 1987 but the memories of a 10' jon boat and a golden retriever running all over the lake are my favorite.
