You know it's funny you can go to the jersey shore and their philly cheese steak is made with roast beef, then you can go across the country to california and their steak shops serve philly cheese steaks with lettuce tomato and onion. Just saying cheese steak don't cut it if you never had a real one! I go to the source or make my own Quote
Super User flyfisher Posted October 19, 2013 Author Super User Posted October 19, 2013 Yeah that is pretty much a test for me anytime i go to a new place that advertises authentic philly cheesesteaks. When i order and they ask me if i want lettuce tomato and mayo i say no thanks and order a meatball instead. There is a place that opened up here about a year ago called straight out of philly that is supposed to be the real deal and they get amoroso rolls so they might be worth checking out but i have been heart broken so many times i am not sure it is worth the effort.... All i want is meat, white american cheese and some hot peppers and i am good to go Quote
Global Moderator Bluebasser86 Posted October 20, 2013 Global Moderator Posted October 20, 2013 Never a bad time for chili! We have chili cook offs at work once in awhile. I won the last one on my shift with my dad's chili recipe Quote

tholmes Posted October 22, 2013 Posted October 22, 2013 I just finished cooking a pot of my infamous black chili. My wife won't even go in the kitchen while it's cooking. Tom Quote

Super User Oregon Native Posted October 22, 2013 Super User Posted October 22, 2013 Carrol Shelby's in a brown bag is a very good chili for something ya just want to throw together. Quote
loudcherokee Posted October 23, 2013 Posted October 23, 2013 Carrol Shelby's in a brown bag is a very good chili for something ya just want to throw together.very good stuff. I use it as the base mix for my chili. Secret to hot chili is in the meat. After browning and draining the meat, i add pureed jalepenos, the entire bottle of jalepeno juice, cayanne pepper, some red and green chilis with juice, and if im particularly daring that day, some minced habaneros. Let that simmer on low-med for like an hour, stirring occasionally. Let that meat soak up allllllll that juice and heat, then add it to your chili pot with your beans and what not. I usually have to make two batches, one mild for everybody else, and one my way for myself and the daring. Poured over some fritos and colby jack cheese, and its perfect. People up here like it with mashed potatoes or pasta. Crazy. Id really like to find a way to get ahold of some of those ghost chilis one of these days. LC Quote

LC Sounds good but a bit warm for me untill the ol body does some healing. When my wife and I went to Scotland for our anniverssary a number of years ago they served chili or game stew over rice. To this day there are times when chili over rice is good. I think they call that chili noodle thing ...chili mac don't they! Quote

Lived there until i was 23 and moved to Pittsburgh. Norris is a really nice lake. Clean water, beautiful scenery, good fishing. Too many people in the summer, I agree. Catch one of those volkswagon sized catfish by the dam yet? Lol. LC Quote
